Eggs in Tomatoes with Grilled Onions (Baked or Steamed)
Eggs in Tomatoes with Grilled Onions are so delicious, can be either baked or steamed. It is nutrition dense, low in calories and packed with nutrients like Vitamin C, A, K, Riboflavin, Folate etc. It will be great when served as an appetizer, for breakfast or as a snack. Ingredients:
3 Eggs
3 Large Tomatoes
1 Onion
¼ Cup Cilantro
1/8 tsp salt
Pepper (to taste)
1 Tbsp. Olive Oil
Method:
For Baked Eggs in Tomatoes:
- Preheat oven to 450-degree F (250-degree C).
- Cut the top portion of the tomatoes and remove the seeds and pulp inside.
- Place the tomatoes in the baking tray, break open the egg and pour it inside each tomato.
- Top with chopped onions, cilantro and sprinkle salt and pepper.
- Spray/ Drizzle oil on top.
- Add the remaining onion/ cilantro to the side of the same baking tray or a different one along with some olive oil, salt, pepper and mix them well.
- Bake for 22-25 minutes. When it is about 15 minutes, remove the onion/ cilantro mixture to avoid them getting burnt.
- Enjoy the Delicious Eggs in Tomatoes with grilled onions!
For Steamed Eggs in Tomatoes:
- Cut the top portion of the tomatoes and remove the seeds and pulp inside.
- Place the tomatoes in the baking tray, break open the egg and pour it inside each tomato.
- Top with chopped onions, cilantro and sprinkle salt and pepper.
- Place it in a steamer or idly mould and cook for 15 minutes or until the egg gets well cooked.
- In the meantime, grill the remaining onion and cilantro with little salt, pepper and oil in a pan until it gets browned.
- Serve the steamed eggs in tomatoes with grilled onion. Yum!

Tips:
- If your tomatoes are not that big to hold one egg, beat the eggs with little salt and pepper and then add the required amount in each.
- To check if the eggs are well cooked insert a tooth pick inside and it should come off clean.
