Ingredients:
3 cups cubed Butternut Squash
1 tbsp Honey
1 tbsp Olive Oil
¼ tsp salt
A dash of Black Pepper (Freshly ground)
Method:
- Preheat the oven to 400 degree F/ 200 degree C
- Mix all the ingredients in a baking tray/ sheet.
- Bake for 20-25 minutes until the sides brown well by tossing it once in between.
- Serve as it is or as a salad with some spinach or any salad green along with toasted walnuts and Mozzarella cheese with a drizzle of honey as dressing. Simple, yum and healthy!

Notes:
- You can use red pumpkins instead of butternut squash.
- If you do not have oven, steam the squash and then add the other ingredients mix well and cook over high heat in a pan until it gets browned on the sides.
