Honey Roasted Butternut Squash

Difficulty: Very Easy

Ingredients:

3 cups cubed Butternut Squash

1 tbsp Honey

1 tbsp Olive Oil

¼ tsp salt

A dash of Black Pepper (Freshly ground)

Method:

  1. Preheat the oven to 400 degree F/ 200 degree C
  2. Mix all the ingredients in a baking tray/ sheet.
  3. Bake for 20-25 minutes until the sides brown well by tossing it once in between.
  4. Serve as it is or as a salad with some spinach or any salad green along with toasted walnuts and Mozzarella cheese with a drizzle of honey as dressing. Simple, yum and healthy!

Notes:

  1. You can use red pumpkins instead of butternut squash.
  2. If you do not have oven, steam the squash and then add the other ingredients mix well and cook over high heat in a pan until it gets browned on the sides.
