Whole Wheat Mushroom Chicken Pasta

Ingredients:

2 Cups Whole Wheat Pasta (I used Penne)

9-10 Button Mushrooms (2 cups when finely chopped)

1.5 oz Chicken Breast

1 medium Onion

4 Garlic Pods

1 tsp Italian Seasoning

1.5 cups Pasta Sauce (Tomato Base)

3 cheese slices

1 tbsp Extra Virgin Olive Oil

1 tsp salt

Method:

  1. Boil Pasta in enough water as per package instruction with 0.5 tsp oil.
  2. Finely chop onions, mushroom, garlic and chicken.
  3. Heat 1 tsp oil in a pan over medium high heat, saute the chicken with little salt and pepper for about 2-3 minutes until the chicken is well cooked.
  4. Remove the chicken and keep it aside.
  5. Add the remaining oil to the same pan, saute onion and garlic until translucent.
  6. Add in the mushrooms, cook for about 2 minutes, add the Italian seasoning, cooked pasta, chicken, pasta sauce, salt, mix well and cook for another 2-3 minutes.
  7. Place cheese slices on the top, cover and leave in simmer for about a minute.
  8. Delicious pasta with melted cheese is ready to serve hot.

Notes:

  1. You can even sprinkle 0.5 cup shredded cheese instead of the cheese slices.
  2. Any type of pasta can be used but use whole grain for a fiber and nutrition rich dish.
  3. Vegetables like broccoli, zucchini can also be added.
  4. Chicken can be skipped if you want it to be a vegetarian pasta.
