Whole Wheat Mushroom Chicken Pasta

Ingredients:
2 Cups Whole Wheat Pasta (I used Penne)
9-10 Button Mushrooms (2 cups when finely chopped)
1.5 oz Chicken Breast
1 medium Onion
4 Garlic Pods
1 tsp Italian Seasoning
1.5 cups Pasta Sauce (Tomato Base)
3 cheese slices
1 tbsp Extra Virgin Olive Oil
1 tsp salt
Method:
- Boil Pasta in enough water as per package instruction with 0.5 tsp oil.
- Finely chop onions, mushroom, garlic and chicken.
- Heat 1 tsp oil in a pan over medium high heat, saute the chicken with little salt and pepper for about 2-3 minutes until the chicken is well cooked.
- Remove the chicken and keep it aside.
- Add the remaining oil to the same pan, saute onion and garlic until translucent.
- Add in the mushrooms, cook for about 2 minutes, add the Italian seasoning, cooked pasta, chicken, pasta sauce, salt, mix well and cook for another 2-3 minutes.
- Place cheese slices on the top, cover and leave in simmer for about a minute.
- Delicious pasta with melted cheese is ready to serve hot.

Notes:
- You can even sprinkle 0.5 cup shredded cheese instead of the cheese slices.
- Any type of pasta can be used but use whole grain for a fiber and nutrition rich dish.
- Vegetables like broccoli, zucchini can also be added.
- Chicken can be skipped if you want it to be a vegetarian pasta.
