Ingredients:
1 big bunch (100 g) Arai Keerai (Spleen Amaranth)
5-6 Shallots
2 Red Chillies
1 tsp Cumin Seeds
¼ tsp Salt
A pinch of sugar
4 Cups Water
Method:
- Remove only the very thick stem part of the Keerai (Greens), wash well using salt and turmeric.
- Add all ingredients to a pot except the greens and bring it to a boil.
- Add the greens and cook without lid for 5-7 minutes, until the leaves wilts and become soft.
- Mash it well and serve. Goes great with Sambar rice, yogurt rice or just over hot plain rice with little ghee.. Delicious…..

Notes:
- Adjust water, the dish should be little watery for the best taste.
- Adding a pinch of sugar prevents the green from discoloration.
- You can even add one tomato for a different taste.
- Surprised to see that the leaves by itself has little to no fiber. Nutrition fact that provided do not include the stalk. I’m sure adding the stalk without discarding them will increase the fiber content as well.
