Ingredients:
3 cups Red Pumpkin
1.5 tbsp Honey
15 Mint Leaves
Method:
- Chop Pumpkin into small pieces.
- Add honey and finely chopped mint leaves, mix well.
- Rest it for minimum 30 minutes and then serve.

Notes:
- Longer the resting period, the better.
- This is a crunchy salad. If you don’t like it crunchy, steam the pumpkin for 5-10 minutes and then follow the same recipe.
- You can use jaggery instead of honey.
