Ingredients:
2 cups Fresh Red Soya beans
1 large onion
2 tomatoes
2 Green Chilly
1 inch chopped ginger
2 tsp oil
2 cups water
For Seasoning:
½ tsp Chilli Powder
½ tsp Coriander powder
¼ tsp turmeric powder
½ tsp Salt
To Grind:
2 tbsp Grated Coconut
1.5 tsp Fennel Seeds
Method:
- Finely Chop Onion, Ginger, Tomatoes and Slit Green Chilies.
- Heat oil in a pressure cooker, add Ginger and fry for 30 seconds.
- Add Onions, cook for a minute until the color changes.
- Add in the Tomatoes, cook for another one minute.
- Add Green chilies and the masala given under ‘For Seasoning’ and fry for a minute.
- Time to add the fresh Red Soya beans and water, bring it to a boil.
- Meanwhile, grind the ingredients given under ‘To Grind’ with little water and add it to the boiling mixture.
- Close the lid, pressure cook for 4 whistles and then simmer it for another 10 minutes.
- When the pressure gets released, mash some of the soya beans to thicken the gravy.
- Tastes best when served over millet rice, rice or roti.

Notes:
- You can follow the same recipe using Rajma/Red Kidney Beans instead of Soya beans. If so, you need to soak the beans in water overnight.
- If you don’t like bits and pieces of ginger coming in your mouth, grate ginger instead of chopping it. I chopped just because I like it that way.
- Check for the spice level before adding chilli powder because, ginger and green chilli already gives the dish some spiciness.
