Pumpkin Poha Yogurt Salad

Ingredients:

1 cup Grated White Pumpkin

½ cup Grated Carrot

1 cup Flattened Red Rice/poha/aval (I used matta arisi aval)

2 cups Low Fat Yogurt/curd

¼ cup Cilantro/ Coriander leaves

¼ cup Raisins

1 Green Chilly/ Jalapenos

A dash of Pepper powder

A dash of Cumin Powder

Two pinch of Salt

Method:

  1. Grate pumpkin and carrots.
  2. Finely chop coriander leaves and green chilies.
  3. Mix all the items given under ingredient list until well combined.
  4. Serve fresh or chilled. You can even pack it for lunch!

Notes:

  1. You can also follow the same recipe using puffed rice instead of flattened rice.
  2. Reduce the yogurt if it is very thick and add some water for consistency. I used homemade curd/yogurt made from low fat milk.
  3. Use only low fat yogurt, so you decrease the amount of fat and increase the protein and other nutrition values.
  4. This food is high in Carbohydrate and a store house of nutrients like Vitamin A, Vitamin C, Riboflavin, Calcium, Phosphorus, Potassium and Manganese with a low Glycemic Index. So, this will be a healthy and great nutrient rich energy source that will brighten your day.
