Ingredients:
1 cup Grated White Pumpkin
½ cup Grated Carrot
1 cup Flattened Red Rice/poha/aval (I used matta arisi aval)
2 cups Low Fat Yogurt/curd
¼ cup Cilantro/ Coriander leaves
¼ cup Raisins
1 Green Chilly/ Jalapenos
A dash of Pepper powder
A dash of Cumin Powder
Two pinch of Salt
Method:
- Grate pumpkin and carrots.
- Finely chop coriander leaves and green chilies.
- Mix all the items given under ingredient list until well combined.
- Serve fresh or chilled. You can even pack it for lunch!

Notes:
- You can also follow the same recipe using puffed rice instead of flattened rice.
- Reduce the yogurt if it is very thick and add some water for consistency. I used homemade curd/yogurt made from low fat milk.
- Use only low fat yogurt, so you decrease the amount of fat and increase the protein and other nutrition values.
- This food is high in Carbohydrate and a store house of nutrients like Vitamin A, Vitamin C, Riboflavin, Calcium, Phosphorus, Potassium and Manganese with a low Glycemic Index. So, this will be a healthy and great nutrient rich energy source that will brighten your day.
